The famous Kalua Pig is the main course of any luau. It is a whole pig roasted in an earthen pit oven, called imu. The pig is covered with banana and ti leaves. Usually several wet burlap bags are put together with the pig to add steam and keep the heat in. The cooking of Kalua pig may take up to 8 hours.

Very often you can meet a dish, named Chicken Long Rice. Rice is cooked in chicken broth, together with onion, celery, carrots, and mushrooms.
